Activate America:
Healthy Meals--Bring on the Grill
Grilling is one of the healthiest ways to add flavor
without fat.
Choose foods that are naturally low in fat. Use local
homegrown veggies to add to your healthy diet.A few favorite recipes
that will keep your taste buds watering and your waistline in
check is all you need. Here are a few sample recipes for you to
try.
Tomatoes are a great source of vitamins and lycopene. Try
grilling your tomatoes with a little olive oil for a heart healthy side
dish.
Grilled squash has a sweet flavor and loads of vitamin A.
Squash can be grilled as easily as baked in the oven. Choose your
favorite squash and cut down the middle, clean out all the seeds and
strings. Mix together olive oil and fresh herbs, like basil, cilantro,
and oregano. Fresh herbs should be chopped finely. Brush mixture over
exposed squash meat and grill directly over medium heat. You want good
grill marks but watch for burning. Remove from grill and serve hot.
You don't need fat for flavor, Rubs and marinades can
spice up your healthy foods.
Grill up some healthy chicken to go with your squash.
Marinade boneless, skinless chicken breast cut into strips in the juice
of one lemon, one tablespoon of olive oil and any spices you enjoy
for about 30 minutes in the refrigerator.
Grill over medium heat with your squash for about 10-12
minutes until the juices run clear. Serve hot for a perfect healthy
summer dinner.
Remember to use flavorings such as marinades and rubs for
flavor and enjoy the fresh bounty of the local harvests for your
healthiest meals.

YMCA of
Saratoga Community Garden
Look What's Growing!
The YMCA Community Garden is 'up and growing'
already. This year it has been divided into three sections.
Saratoga Bridges will be working part of it, as will a YMCA staff
member and, of course, the kids. Right now you'll see some
lettuce, herbs and a tipi. If you look closely you'll notice some
morning glories coming up around the sign posts. These are from
last years plants. The tipi will support green beans. Under
the straw we have potatoes.
Recently the preschool classes learned about gardening and planted some
seeds indoors that will soon be put in the garden.
We have a core group of volunteers to help weed and pick. If
you'd like to join us, please contact Julie VanDeusen at julievandeusen@gmail.com or
899-4937.
